Frozen Supply: Stuffed Bell Peppers

I’m trying to regain my domesticity. Is that even a word? It should be now. When you are running around like crazy for years without really having a budget for food, you forget how to cook. Real life.

Living with someone else who has a schedule that is much more loosely structured than your own is hard when it comes to meal planning. Sometimes I’m home at 4:30, sometimes I’m home at 9:30, but The Boy is (pretty much) always around. I’ve discovered that having a frozen supply of something super easy is the most helpful. We’ve been on the stuffed bell pepper kick for a month or so now, but I need more options! What is everyone else cooking and freezing for their weekday craziness?

(This is the easiest recipe ever: 6 bell peppers, 1 pack of ground meat (or ground turkey :), chopped onions/bell pepper/celery, breadcrumbs. Saute your veggies, add your ground meat to brown (don’t forget to season it), then mix in your bread crumbs. Fill your peppers (that you chopped the top off of & hallowed out), top with a splash of bread crumbs, put them in the pan, then place about 2 cm of water in the bottom of the pan. Cover with foil and let those puppies ride in the oven for like 30 minutes at 400. The water & the cover help the peppers steam and get super yum. After I eat one – you know, taste test it – I pack them up in single freezer zipper bags and pop them in the freezer. Voila, meals for dayz.)
